Chocolate Sandwich Cake

This recipe is from a book called ‘One Mix A Hundred Cakes’. I have never attempted this before so as a bit of a perfectionist I’m not 100% happy with the look of it, but that’s just me being fussy!


Here’s the recipe


I didn’t use chocolate spread for the icing, I found a recipe online. Also, I doubled the quantities of the ingredients to make a bigger cake.



For the chocolate frosting


  • 50g Margarine
  • 45g Cocoa powder
  • 75ml Milk
  • 1 tsp Vanilla extract
  • 450g Icing sugar


  1. Beat cocoa and margarine together in a bowl until combined.
  2. Add the milk and vanilla and beat until smooth.
  3. Gradually add in the sifted icing sugar until you achieve desired consistency.

* Adjust with milk/icing sugar as desired.
