Baking is something that I really love to do. With Halloween coming up it is the perfect excuse to get a bit more adventurous and create some funky themed Halloween cupcakes!
I originally found this idea on Pinterest and it says to use cake box mixes, however I prefer to use my own recipe.
Makes about 16 cupcakes
Brownie bottom ingredients:
- 1 cup caster sugar
- 1/2 cup plain flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 1/4 baking powder
- 2 eggs
- 1/2 cup oil
- 1 teaspoon vanilla
Mix together all of the dry ingredients for the brownie and then add in all of the wet. Mix together using balloon whisk.
- 240g plain flour
- 280g caster sugar
- 3 teaspoons baking powder
- 80g butter
- 240ml milk
- 2 eggs
- 1 teaspoon vanilla essence
- Orange food colouring (or mix red & yellow colourings together until desired
Again, mix together the dry ingredients and then add wet. Once all of the ingredients are mixed, dye the cake mix orange.
When putting the mix into the cases go with the 1/3:2/3 ratio for the mixes. So 1/3 brownie mix to make the ‘muddy patch’ and then 2/3 of cake mix to create the pumpkin on top! Make sure to leave rising room.
To decorate I used ready made icing shown in the picture below. This kind of vanilla flavoured frosting ruined it for me as it really didn’t taste good at all. It was on sale in co-op so I figured I’d give it a go. If you do use ready made I 100% recommend any Betty Crocker icing – every one I’ve ever had has tasted amazing! I found some Halloween sprinkles hidden away in the cupboard so I mixed them all together for the spooky decoration to make them into Halloween cupcakes.
Upon reading this recipe idea originally I was a bit sceptical that it would actually work! I thought the brownie ad cake mixes would mix together in the cases and come out a cakey/brownie mess! When they came out looking pretty perfect I was really surprised and even Jack was impressed!
